Classes at 3FE

Hey folks, 

So the next round of classes are now live and ready to be booked. We have espresso, milk and filter classes on offer so definitely something to suit everyone. Keep an eye on this space for a lot more events very soon too.

What’s all this about Vienna?

It’s already started: the great Irish migration. No, not to Poznan. To Vienna!

Several of the 3FE family have traveled to Vienna to represent Ireland at the World Coffee Events as well as running our own speakers event (Tamper Tantrum Live). Colin won this year’s Irish Barista Championships—his 3rd title in as many attempts—so he’ll be representing Ireland in the World Barista Championship. 

He only squeaked past our Lorraine to finish 1st, leaving us absolutely delighted with a 1-2 3FE sweep this year. Colin has finished 4th in the World on two separate occassions before in Atlanta 2009 and London 2010. This year, we’re hoping for an equally impressive finish and we’ve all working really hard to give him the best chance possible.

Our Dave also managed to take away the Irish Brewers Cup title and the infamous Pigeon trophy in his first attempt last month. A pastry chef by trade, Dave now goes on to represent Ireland in the World Brewers Cup and we’ve got high hopes for him, too. C’mon the Brew Owl!!

And, last but not least, our Monika re-claimed her title as Slovak Barista Champ only a few weeks ago! Thanks to her win, we’ve got our fingers crossed for a duke-‘em-out battle between herself and Col for the ultimate win. We’ve got our fingers crossed for another 1-2-3FE sweep in either’s favour… ;)

We’ll include a link as well as a time-table down at the bottom for anyone  keen to get in on the action from afar. 

3FE has always been heavily involved in all sorts of competitions and we see it as an excellent way to not only learn more about coffee, but also translate some of that into our every day service. Although many of the events are individual competitions, it’s very much a team effort that draws everyone together with a common goal. We’d like to thank you all for your support over the past 2 1/2 years and hopefully we’ll be able to bring back some silverware for Ireland this year. Wish us luck!

Summer Opening Hours at 3FE Twisted Pepper or Adventures in Rum and why you should trust Rory

Mornings have never really been our thing on Abbey Street and despite our gut instincts telling us differently things never really get going until 11am, so now we will too. As of next Monday we’ll be opening every day 11-6 at Twisted Pepper. 

We’re also starting to see the benefits of our pastry chefs endevours with a new line up of cakes and treats. We bake all our own cakes and treats at 3FE and we’re looking forward to adding to favourites like rubarb/choc brownies, Jameson cake and Pecan/Maple pie!

We’re also going to be closing a little earlier from now on but this is for a much more awesome reason. Any of you that have visited the Twisted Pepper after 6pm recently would have noticed the new rum bar run (usually) by our mate Rory.

Rory is incredibly passionate about all things cocktail, particularly rum, and the Rum Bar has really taken off of late having started in the very same lobby from whence we came.

Last week they launched tasting trays of 6 rums samples for €15 and they’ve been going down a treat. Rory’s gonna be moving into our 6pm slot from now on and we’re looking forward to chilling out with a few drinks and tunes on long summer evenings.

Marvelous May

Hey folks!

Last month’s courses booked out incredibly quickly, so we’ve decided to keep up with our twice-a-day-every-other-Saturday course set up for this May. 

As always, Pete Williams will be running these fantastically fun home brewing courses as well as the gleefully geeky group espresso course that we offer every so often. 

We’ve already had enough requests to book out a couple of the courses, so we’d definitely recommend booking in quick if you’ve got your heart set on making it in to see us this month.

We’re going to Vienna!

Speaker #6 Keith O’Sullivan

There are people that enjoy coffee at home, and people that work in coffee. Then in between, there is a third place where coffee becomes something more than a treat or a hobby. 

As we’re hosting the Hasbean World Home Barista Championships we thought it would be a great opportunity to get a home-enthusiast in to give us their slant on our industry and see things from a different perspective. 

Keith O’Sullivan was a customer of ours, still is in fact. One day he came in, sat at his stool and proclaimed he was going to enter the Irish Brewers Cup. We smiled. 

Keith not only won the competition, but also went on to win the World Brewers Cup in Maastricht that year, beating many prestigious opponents along the way too. 

Keith represents that section of the industry that has always had a major influence on innovation and trends. Home baristas have always been opinionated, quality focused, and asking questions of those that work within the coffee business itself. Indeed a lot of the real drivers of this industry were once home-enthusiasts themselves.

Above all, Keith is as intelligent and passionate a coffee drinker as you’re likely to come by. We’re looking forward to his presentation

Speaker #5 Kas Ali

There was a wonderful time in my life when any caffeine withdrawals I was suffering could be eased with a cup of bog standard tea. Airports, hotels and holidays weren’t a problem for me. Cheap tea bags eased my pain. Until I met Kas Ali.

Kas is the owner operator of the incredible Waterloo Tea Gardens in Cardiff, Wales, and is everything to tea that we aspire to be for coffee. His dedication to quality, service and all things tea have seen Waterloo become one of Europes real tea destinations.

Tamper Tantrum is delighted to have Kas coming across to be our first non-coffee speaker and we’re eagerly anticipating his talk. There is no doubt in my mind that you will praise him on the day and curse him in airports thereafter…

Speaker #4 Tim Styles

Whenever I think of innovative and ground breaking coffee bars, Tim Williams always seems to involved somewhere. Boasting a portfolio that includes Intelligentsia Venice, Penny University and his current haunt St. Ali in Clerkenwell, London, Tim has become one of our industry’s leading lights in serving specialty coffee the way it should be.

Having started his career at Ray Cafe in Melbourne, Tim’s career has also seen him hold positions at some incredible places like Square Mile, Flat White, Climpson & Sons and a no doubt impressive repertoire of guest-shift appearances to boot.

Tim’s attitude to quality and service is inherent in every aspect of his work whether it be on the shop floor itself or through his other projects such as Coffee Common, his work coaching competition baristas or the Tropical Saloon Blog.

My only criticism of Tim is that we have yet to see him on a competition floor, but the beauty of Tamper Tantrum is that professionals like Tim finally get the podium deserved. I’m ridiculously excited about this one.

April Brew Courses Abound

Spring, if it’s not already here, is definitely coming—so folks, let’s get back to brewing!

Last month, our Saturday courses sold out amazingly quickly. This time around, we’ve decided to offer a morning course (from 10:00 to 12:30) as well as an afternoon course (from 14:00 to 16:30) not only to suit your weekend sleep-schedule, but to also ensure that we can accomodate everyone interested in taking a course without going over our 8 student limit. ;)

Starting at either 10:00 or 14:00 on April 7th and April 21st, we’ll be running our fabulously popular “Brewing Coffee at Home.” Like always, we’ll be focusing on the main three filter methods that we use at 3FE: Chemex, Kalita and Aeropress. You’ll get a hands-on tutorial in how to brew filter coffee with each of these brewers led by our super-barista extraordinaire Pete Williams. As we’ve done in the past few weeks, lunch and a treat is included in the price of the ticket, along with a bag of coffee for you to take home. It’s a great way to either get introduced to filter coffee or to hone your existing home-brew technique—feel free to bring along your favourite coffee gizmo. Besides, it’s always great fun!

Some of you may already have your own brew gadgets which we welcome you to bring along. Otherwise we have plenty more bits and bobs in the shop for you to try out and familiarise yourself with in order to see what your favourite brew method and technique might be…

The brew course is strictly limited to eight students (to allow plenty of time for hands-on fun and questions) and tickets have already started to go, so hop to it quick before they all disappear again!

For those of you wondering why we’re offering brew courses on the Saturday of the Easter weekend, we thought it would be a different and delightful way to celebrate the Easter season and the coming of spring with friends and family alike.  We’re SO looking forward to seeing you!!

Speaker #3 Ellie Matuszak

We really feel that we’ve pulled off something of a coup in convincing one of the worlds pre-eminent authorities on coffee to appear at Tamper Tantrum Live this year. Ellie Matuszak has established a world wide reputation in her work with both SCAA and in her previous position with Intelligentsia Coffee as Director of Training and Knowledge.

Ellie Matuszak is Director of Professional Development for SCAA after two terms of service to SCAA’s Board of Directors and serving as Chair of the SCAA Professional Development Committee. She has participated extensively in SCAA’s training programs including the USBC, the Instructor Development Program, the BGA, and Coffee Corps, and currently sits on the Board of Directors for World Coffee Events. 

Fresh from the enormously successful SCAA Instructor Development Programme held at Square Mile in London, Ellie’s presence alone is worth the trip to Tamper Tantrum Live.
