No, not to Poznan. To Vienna!&lt;/p&gt;
&lt;p&gt;Several of the 3FE family have traveled to Vienna to represent Ireland at the World Coffee Events as well as running our own speakers event (Tamper Tantrum Live). Colin won this year’s Irish Barista Championships&amp;#8212;his 3rd title in as many attempts&amp;#8212;so he&amp;#8217;ll be representing Ireland in the World Barista Championship. &lt;/p&gt;
&lt;p&gt;He only squeaked past our Lorraine to finish 1st, leaving us absolutely delighted with a 1-2&amp;#160;3FE sweep this year. Colin has finished 4th in the World on two separate occassions before in Atlanta 2009 and London 2010. This year, we&amp;#8217;re hoping for an equally impressive finish and we&amp;#8217;ve all working really hard to give him the best chance possible.&lt;/p&gt;
&lt;p&gt;Our Dave also managed to take away the Irish Brewers Cup title and the infamous Pigeon trophy in his first attempt last month. A pastry chef by trade, Dave now goes on to represent Ireland in the World Brewers Cup and we&amp;#8217;ve got high hopes for him, too. C&amp;#8217;mon the Brew Owl!!&lt;/p&gt;
&lt;p&gt;And, last but not least, our Monika re-claimed her title as Slovak Barista Champ only a few weeks ago! Thanks to her win, we&amp;#8217;ve got our fingers crossed for a duke-&amp;#8216;em-out battle between herself and Col for the ultimate win. We&amp;#8217;ve got our fingers crossed for another 1-2-3FE sweep in either&amp;#8217;s favour&amp;#8230; ;) &lt;/p&gt;
&lt;p&gt;Want to keep up with the competitions-goings-on, or maybe you&amp;#8217;re sad you&amp;#8217;re missing Tamper Tantrum? Everything&amp;#8217;s being streamed live from Vienna courtesy of World Coffee Events and the Specialty Coffee Association of Europe. We&amp;#8217;ll include a link as well as a time-table down at the bottom for anyone  keen to get in on the action from afar. &lt;/p&gt;
&lt;p&gt;3FE has always been heavily involved in all sorts of competitions and we see it as an excellent way to not only learn more about coffee, but also translate some of that into our every day service. Although many of the events are individual competitions, it’s very much a team effort that draws everyone together with a common goal. We&amp;#8217;d like to thank you all for your support over the past 2&amp;#160;1/2 years and hopefully we&amp;#8217;ll be able to bring back some silverware for Ireland this year. &lt;p&gt;Mornings have never really been our thing on Abbey Street and despite our gut instincts telling us differently things never really get going until 11am, so now we will too. As of next Monday we&amp;#8217;ll be opening every day 11-6 at Twisted Pepper. &lt;/p&gt;
&lt;p&gt;We&amp;#8217;re also starting to see the benefits of our pastry chefs endevours with a new line up of cakes and treats. We bake all our own cakes and treats at 3FE and we&amp;#8217;re looking forward to adding to favourites like rubarb/choc brownies, Jameson cake and Pecan/Maple pie!&lt;/p&gt;
&lt;p&gt;We&amp;#8217;re also going to be closing a little earlier from now on but this is for a much more awesome reason. Any of you that have visited the Twisted Pepper after 6pm recently would have noticed the new rum bar run (usually) by our mate Rory.&lt;/p&gt;
&lt;p&gt;Rory is incredibly passionate about all things cocktail, particularly rum, and the Rum Bar has really taken off of late having started in the very same lobby from whence we came.&lt;/p&gt;
&lt;p&gt;Last week they launched tasting trays of 6 rums samples for €15 and they&amp;#8217;ve been going down a treat. Rory&amp;#8217;s gonna be moving into our 6pm slot from now on and we&amp;#8217;re looking forward to chilling out with a few drinks and tunes on long summer evenings.&lt;/p&gt;

&lt;p&gt;As always, Pete Williams will be running these fantastically fun home brewing courses as well as the gleefully geeky group espresso course that we offer every so often. &lt;/p&gt;

&lt;p&gt;As we&amp;#8217;re hosting the &lt;a href="http://thirdfloorespresso.tumblr.com/post/18788495045/hasbean-world-home-barista-championships"&gt;Hasbean World Home Barista Championships&lt;/a&gt; we thought it would be a great opportunity to get a home-enthusiast in to give us their slant on our industry and see things from a different perspective. &lt;/p&gt;
&lt;p&gt;Keith O&amp;#8217;Sullivan was a customer of ours, still is in fact. One day he came in, sat at his stool and proclaimed he was going to enter the Irish Brewers Cup. We smiled. &lt;/p&gt;
&lt;p&gt;Keith not only won the competition, but also went on to win the World Brewers Cup in Maastricht that year, beating many prestigious opponents along the way too. &lt;/p&gt;
&lt;p&gt;Keith represents that section of the industry that has always had a major influence on innovation and trends. Home baristas have always been opinionated, quality focused, and asking questions of those that work within the coffee business itself. Indeed a lot of the real drivers of this industry were once home-enthusiasts themselves.&lt;/p&gt;
&lt;p&gt;Above all, Keith is as intelligent and passionate a coffee drinker as you&amp;#8217;re likely to come by. We&amp;#8217;re looking forward to his presentation&lt;/p&gt;

Boasting a portfolio that includes Intelligentsia Venice, Penny University and his current haunt St. Ali in Clerkenwell, London, Tim has become one of our industry&amp;#8217;s leading lights in serving specialty coffee the way it should be.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Having started his career at Ray Cafe in Melbourne, Tim&amp;#8217;s career has also seen him hold positions at some incredible places like Square Mile, Flat White, Climpson &amp;amp; Sons and a no doubt impressive repertoire of guest-shift appearances to boot.&lt;/p&gt;
&lt;p&gt;Tim&amp;#8217;s attitude to quality and service is inherent in every aspect of his work whether it be on the shop floor itself or through his other projects such as Coffee Common, his work coaching competition baristas or the Tropical Saloon Blog.&lt;/p&gt;
&lt;p&gt;My only criticism of Tim is that we have yet to see him on a competition floor, but the beauty of Tamper Tantrum is that professionals like Tim finally get the podium deserved. I&amp;#8217;m ridiculously excited about this one.&lt;/p&gt;

&lt;p&gt;Last month, our Saturday courses sold out amazingly quickly. This time around, we&amp;#8217;ve decided to offer a morning course (from 10:00 to 12:30) as well as an afternoon course (from 14:00 to 16:30) not only to suit your weekend sleep-schedule, but to also ensure that we can accomodate everyone interested in taking a course without going over our 8 student limit. ;)&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;span&gt;&lt;span&gt;Starting at either 10:00 or 14:00 on April 7th and April 21st, we&amp;#8217;ll be running our fabulously popular &amp;#8220;Brewing Coffee at Home.&amp;#8221;&lt;/span&gt;&lt;span&gt; Like always, w&lt;/span&gt;&lt;span&gt;e&amp;#8217;ll be focusing on the main three filter methods that we use at 3FE: Chemex, Kalita and Aeropress. You&amp;#8217;ll get a hands-on tutorial in how to brew filter coffee with each of these brewers led by our super-barista extraordinaire Pete Williams. As we&amp;#8217;ve done in the past few weeks, lunch and a treat is included in the price of the ticket, along with a bag of coffee for you to take home. It&amp;#8217;s a great way to either get introduced to filter coffee or to hone your existing home-brew technique&amp;#8212;feel free to bring along your favourite coffee gizmo. Besides, it&amp;#8217;s always great fun!&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;span&gt;Some of you may already have your own brew gadgets which we welcome you to bring along. Otherwise we have plenty more bits and bobs in the shop for you to try out and familiarise yourself with in order to see what your favourite brew method and technique might be&amp;#8230;&lt;br/&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;span&gt;The brew course is strictly limited to eight students (to allow plenty of time for hands-on fun and questions) and tickets have already started to go, so hop to it quick before they all disappear again!&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;

Ellie Matuszak has established a world wide reputation in her work with both SCAA and in her previous position with Intelligentsia Coffee as Director of Training and Knowledge.&lt;/p&gt;
&lt;p&gt;&lt;a id="_GoBack" name="_GoBack"&gt;&lt;/a&gt;Ellie Matuszak is Director of Professional Development for SCAA after two terms of service to SCAA’s Board of Directors and serving as Chair of the SCAA Professional Development Committee. She has participated extensively in SCAA’s training programs including the USBC, the Instructor Development Program, the BGA, and Coffee Corps, and currently sits on the Board of Directors for World Coffee Events. &lt;/p&gt;

&lt;p&gt;We are delighted to announce that we will be joined at Tamper Tantrum Live on March 31st by the indomitable Rasmus Helgebostad who&amp;#8217;s flying in from Norway to be with us on the day.&lt;/p&gt;
&lt;p&gt;Rasmus&amp;#8217; was a co-founder of Kaffemisjonen in Bergen which has grown, along with its sister cafes, to be counted amongst Europes finest coffee destinations. He is a former captain of the Norwegian barista team and as accomplished and seasoned a competitor as you&amp;#8217;re likely to find.&lt;/p&gt;
&lt;p&gt;Rasmus&amp;#8217; contribution to coffee extends to his work with the SCAE and also as a significant contributor online. We are delighted and honored to have Rasmus with us and can&amp;#8217;t wait for his talk.&lt;/p&gt;

&lt;p&gt;Undoubtedly one of the worlds most respected baristas, John Gordon of Square Mile Coffee ticks many of the boxes that a great barista should. A two time UK Barista champion and former UK Latte Art Champion, John is also an accomplished machine engineer and roaster to boot. &lt;/p&gt;
&lt;p&gt;On top of all that John is also a purveyor of fine hand made tampers and recently organised the hugely successful auction in aid of Safe House Coffee at Prufrock in London.&lt;/p&gt;
&lt;p&gt;John is also what we like to call an honorary 3FEer and has always been not just a great friend to us but also a wonderful example to baristas everywhere. To say we&amp;#8217;re excited about his presentation would be to put it mildly. &lt;/p&gt;

As someone who can constantly see the training room from her desk, I can certainly attest to the fact that they both put in an extraordinary amount of time and effort into their presentations. It was wonderful to watch both of them from start to finish (although Col &lt;em&gt;was &lt;/em&gt;a bit secretive leading up to his presentation in the final) and really delightful to see such hard work pay off for both of them.&lt;/p&gt;
&lt;p&gt;To celebrate, Steve has secured us a world-exclusive coffee from a very small farm in Costa Rica. The farmers, Maria Eugenia and Juan Luis, only produced ten green bags of coffee this year, eight of which they sold unprocessed in order to be able to pay for their very own coffee mill. They processed the remaining two bags with their brand-new mill themselves, and it’s these two bags that Steve discovered while blind-cupping about 80 small-lot Costa Rican coffees.&lt;/p&gt;
&lt;p&gt;We’re going to showcase this remarkable coffee—the Costa Rica Farami—in our shops the week of March 4th - March 11th. To kick things off, we’ll be cupping the coffee in our Lower Grand Canal Shop this Sunday, March 4th (details to follow). We’ll also be doing some small little things throughout the week to celebrate, as well, so keep your eyes open! There should be at least one opportunity to sneak out of your office for some Farami-flavoured fun…&lt;/p&gt;
&lt;p&gt;FARAMI is a totally 100% integrated farm concept, in which Maria Eugenia and Juan Luis raise animals such as pigs, goats, sheep, turkeys, and chickens, and then collect their manure for the coffee farm. They sell the pigs, milk the goats, sell the eggs, and now, they can also process their own coffee. When it comes to the cup, Farami delivers a lovely citrus, lemon and lime to keep it light and long, with an underlying chocolate sweetness, which gives the Farami a bit of body and a lovely mouthfeel.&lt;/p&gt;

It&amp;#8217;s been a while, hasn&amp;#8217;t it? You might have noticed that it&amp;#8217;s nearly February. It&amp;#8217;s often a difficult month to deal with, not just because you have that funny little holiday in the middle or because the weather generally tends to be complete and utter crap (and you&amp;#8217;re DYING for summer), but also because somewhere in your brain, there&amp;#8217;s a tiny little voice going &amp;#8216;already?!? What the heck happened to January?&amp;#8217;&lt;/p&gt;
&lt;p&gt;But, I&amp;#8217;m digress from the main point of this blog post: we&amp;#8217;ve got some really cool stuff going on to perk up your February. &lt;/p&gt;
&lt;p&gt;First things First: Brew Classes&lt;/p&gt;
&lt;p&gt;For the whole month of February, all of our &amp;#8216;brewing coffee at home&amp;#8217; courses are going to be offered on Saturdays. What&amp;#8217;s with all the switching of the days? That&amp;#8217;ll be explained shortly, along with the second thing. So, instead of staying in on a rainy Saturday and moaning about the cold and wet&amp;#8212;or is it only me that does that?&amp;#8212;you can pop into the Grand Canal Street location where we&amp;#8217;ll have lunch and delicious, delicious coffee waiting for you, at which point you&amp;#8217;ll also get to learn how to replicate that awesomeness at home (reserved for the following Sunday morning, when it&amp;#8217;s still cold and wet, only now you don&amp;#8217;t need to leave your house because along with all that new coffee-brewing knowledge, you&amp;#8217;ll have gotten a 250g bag of beans with which to ensure amazing coffee from the warmth of your own kitchen/couch). &lt;/p&gt;
&lt;p&gt;Second things Second: Sunday Espresso Class&lt;/p&gt;
&lt;p&gt;It&amp;#8217;s near, it&amp;#8217;s here, and it&amp;#8217;s bound to give you espresso face (in the best possible way)! We have been running private, one-on-one lessons with an espresso machine pretty much ever since Col opened the doors of the little lobby shop in the Twisted Pepper. Nowadays, we&amp;#8217;ve got this really nice training room that would&amp;#8212;finally&amp;#8212;be the perfect space in which to host a group espresso lesson. Our private courses run for two hours and cost about 250EUR per person, but these new group courses will run for six hours and cost 125EUR per person. We&amp;#8217;re limiting them to six people per course (to ensure that everyone gets ample, hands-on time with the machine) and we&amp;#8217;re only offering two for the whole month of February. We&amp;#8217;ve already had a load of enquiries, so we&amp;#8217;re pretty sure those twelve places will disappear pretty quickly. We&amp;#8217;ll also be providing (as usual) lunch, treats, and a 250&amp;#160;g bag of coffee to every student, making it a fantastic way to spend a potentially-rainy Sunday. &lt;/p&gt;
&lt;p&gt;This month, instead of releasing course tickets one week in advance of the actual class, we&amp;#8217;ve decided to open up booking for all of February&amp;#8217;s classes so that everyone will be able to find something that suits their schedules. Besides, what better way to make February bearable than to have something to which you can look forward? &lt;/p&gt;

&lt;p&gt;This, as you can understand, is quite a lot of growth in a very short amount of time and in truth, most of that growth has happened in the last 12 months.&lt;/p&gt;
&lt;p&gt;Although this is obviously great news, it also concerns me for two reasons: firstly, will the quality of what we do suffer and, secondly, will the quality of what we do suffer?&lt;/p&gt;
&lt;p&gt;Yesterday, we went to visit our latest customer who will be opening up in Dublin 1 in mid-February. It&amp;#8217;s a beautiful shop run by two really passionate people and it&amp;#8217;s incredibly important to me that we help them do a great job. &lt;/p&gt;
&lt;p&gt;We also have Cup opening on South Leinster Street, Roasted Brown opening in Temple Bar (both in the coming weeks) and Cinnamon is still very much in its formative stages, although extremely busy formative stages.&lt;/p&gt;
&lt;p&gt;With this in mind, we have therefore decided that we will be taking on no more new customers until May 2012 at the earliest. It&amp;#8217;s important to us at this stage that we take stock, improve quality and ultimately get really good at what we do right now before moving on to the next step.&lt;/p&gt;
&lt;p&gt;On top of all of that, both of our shops are getting busier every week and we&amp;#8217;re close to launching our Coffee School on Grand Canal Street. It&amp;#8217;s been difficult to turn away potential clients in the last few weeks, but we strongly believe that quality needs to come first in every aspect of what we do.&lt;/p&gt;
&lt;p&gt;In truth, I&amp;#8217;m confident that the quality of what 3FE does has never wained in that 2 year period; if anything, its improved. That, however, doesn&amp;#8217;t mean that we can&amp;#8217;t improve what we do now even further. &lt;/p&gt;
&lt;p&gt;In the meantime, do check out our wholesale clients listed below and lend them your support. As well as numerous coffee shops, we also have one pub, one restaurant, one off license and one retail store on the list (and some pretty good examples of each to boot) so your choice is wide and varied.&lt;/p&gt;

Business aside, this is a really positive step for us, seeing people making the leap to brewing freshly roasted, freshly ground coffee at home. 3FE is about many things but having an impact on the quality of the average cup in Dublin is very high up that list.&lt;/p&gt;
&lt;p&gt;There&amp;#8217;s a few ways we could have reacted to this upsurge but we decided we&amp;#8217;d tackle this a little differently. What we&amp;#8217;ve done is fan the flames, so to speak, and taken a huge chunk out of our retail coffee prices. &lt;/p&gt;
&lt;p&gt;Our prices in the past have been slightly higher than the online hasbean prices and that was unfortunately due to shipping costs and the overheads associated with setting up shop. In light of our recent growth, and as an acknowledgement to our customers who are incredibly loyal and supportive, we&amp;#8217;ve decided its time to pay it back and we can now offer coffees at a price that is comparable to those that Steve has online at Hasbean.&lt;/p&gt;
&lt;p&gt;Machacamarca for instance was €11 and with the new change it is now €8, Argentina (Washed) was €7.50 but now its down to €6.&lt;/p&gt;
&lt;p&gt;In the coming months we will see our coffee offering change a little and there will be price rises on 2 of our drinks but not until the end of January. In the meantime we will swallow the VAT rate on the higher rate goods and we will also commit to the large reductions in the retail coffee offerings to ensure that you guys get the biggest benefit overall. We will also endevour, as always, to make your coffee tastier this year than it did the last.&lt;/p&gt;

As a consequence he&amp;#8217;s left with a few bags surplus of all the coffees and nowhere for them to go.&lt;/p&gt;
&lt;p&gt;So, we at 3fe decided to give them a home and so last Thursday 170 (250g) bags of retail coffee arrived on our doorstep with instructions from Steve to have some fun with them. So we will!&lt;/p&gt;
&lt;p&gt;Tomorrow morning we open our doors and every bag of coffee on the shelves is going for &lt;strong&gt;€5&lt;/strong&gt;. Some are worth €6, most are worth closer to €8 and some are worth as much as €15 but we&amp;#8217;re selling them all off at €5 for one week only. Once it comes to Sunday, the sale ends!&lt;/p&gt;
&lt;p&gt;This is a great chance to sample a variety of coffees, a lot of which we&amp;#8217;ve never had a 3FE and maybe sample something you usually wouldn&amp;#8217;t buy. As I said, theres only 170 bags between the two shops so get in and nab the hidden gems before someone else does!&lt;/p&gt;
